Throughout each course, guests are educated about these delectable, complementary pairings that bring out the fine, distinct flavors in each culinary delicacy.

Carrie Chaloner is the
the driving force behind Premier Wines & Spirits. She spent her childhood holidays on a winery in Spain, and was raised with an enthusiasm for wine. She has worked in the industry in Cayman for eight years. After recognizing a need for unique marketing and product sourcing, she started Premier Wines & Spirits. She holds a Wine & Spirit Education Trust Diploma.

How to drink rum
However you drink it, true rum is pure liquid heaven.
Straight up: Nothing but unadulterated Authentic Caribbean Rum. The only accompaniment you need to appreciate the intense flavours and aromas is a drop of water and a lingering golden sunset.
On the rocks: Want to unfold the flavours a little more? As the rum crashes and cascades over cubes of cool ice, its rich flavours release further.
Mix it up: Soda, ginger ale, ginger beer, or cola with a squeeze of lime or a dash of bitters – whatever Authentic Caribbean Rum mixes with, it’s sweet harmony.
Punch: Punch was invented for rum. Fruity, fun and a perfect way to get any party – or carnival – started.

How to make a Rum Cocktail
There is a modest rhyme, originating from the shores of the Caribbean that describes: “one of sour, two of sweet, three of strong, four of weak”. It is believed that these poetic words make up the first ever cocktail recipe. Since then, bartenders and mixologists across the world have been evolving and adapting ingredients to satisfy our senses and conjure up pure heaven in a glass.
First they have to decide on what will be the strong part – the alcohol, the grit, the essence of the cocktail. What better spirit than Authentic Caribbean rum? So versatile that it can woo any palate, from the plantation owner to the curious tourist.
Then comes the sweet and sour, the fresh tart juices and sugary syrups, whose balance may determine the mixologist’s success or failure. Too sweet and all flavour may be lost, too tart and your taste buds may never forgive you.
Last to be added is the weak part, that which soothes the senses and dilutes the intensity, such as a soft drink, a milky flush or even some sparkling wine.
But to achieve total cocktail nirvana, the greatest bartenders, the sensory technicians, the true mixologists…they understand that the final and most precious ingredient in any cocktail is a warm Caribbean smile.
